All of a sudden this year at the Blue Moon Fish stand we have had some John Dory (St Peter's Fish). I had never eaten it.
If you come across it, try some it's fabuloso!
my recipe (which is my recipe for most fish)
Put a little olive oil on the bottom of a cast iron skillet
lay the John Dory skin side down
squirt fresh lime juice over the fillets and top with a couple pats of butter, and a bit of salt and pepper
broil at about 450 degrees until done
eat with sauteed fresh ramps
my advice: enjoy those blooming trees and buy stock in advil
